HEALTHY PEANUT BUTTER CUPS (REESE’S COPYCAT)
These chocolate peanut butter cups (Reese's Eggs copycat) are one of my all time favorite treats. They are made with no refined sugar, which is easier on the body's digestive system and has more nutrients. Don't have too many of these, but they are a great little treat when you are needing a pick-me-up.
INGREDIENTS
1 cup natural (creamy) peanut butter
3 tablespoons maple syrup
1/2 Tbsp vanilla
1/4 teaspoon fine sea salt
1/3 cup almond flour
3/4 cup dark chocolate (bar or chips)
2 tsp coconut oil
Sea salt (optional for topping)
INSTRUCTIONS
1. In a medium bowl, combine first four ingredients-peanut butter, maple syrup, vanilla, sea salt. Mix until creamy. Add in the almond flour and mix again.
2. Scoop peanut butter mixture into small balls using a tablespoon or a small cookie scoop. Roll balls until smooth, then freeze on parchment paper covered baking sheet for 30 minutes.
3. In a small, microwaveable bowl, melt the chocolate and coconut oil together. Heat for 2 minutes, in 30 second intervals, stirring in between.
4. When the peanut butter balls are hard, remove from freezer and immerse in chocolate. Pull the balls out of the melted chocolate using two forks, letting the excess chocolate drip before returning balls to parchment paper. Sprinkle with flaky sea salt (optional), and return to freezer for another 30 minutes.
5. Enjoy! Store in the freezer to eat later.
